Ale Apothecary
Oregon's most critically acclaimed wild ale producer operates out of a converted garage in Bend's west hills. Founded in 2012 by Deschutes Brewery veteran Paul Arney, Ale Apothecary makes spontaneously fermented ales from 100% Oregon ingredients — local malt, whole-cone hops, wild yeast, and glacier-fed water. Their Sahalie, El Cuatro, and La Tache are among the most sought-after bottles in Oregon. Production is tiny; patience is required and rewarded.
